So, should you stop using parchment paper?

 

Absolutely not.

 

At least, that’s not the conclusion I came away with.

The important lesson is simply that parchment paper has limits.

 

Don’t treat it like an indestructible sheet that can handle anything your oven throws at it.

Don’t confuse it with wax paper.

 

Be especially careful with broilers, toaster ovens, and air fryers.

 

And if your parchment starts smoking or charring, don’t ignore it.
