Watch for Smoke
If your parchment starts smoking, stop and investigate.
Don’t assume a little smoke is normal.
Signs Your Parchment Paper Is Too Hot
Your parchment may be overheating if you notice:
Browning or blackening
Excessive curling
Brittleness
Smoke
Burning odors
Charring around the edges
If you notice these signs, don’t keep cooking as though everything is fine.
Lower the temperature, remove the parchment when safe, and determine whether the paper was used outside its recommended conditions.
