{"id":992,"date":"2026-07-22T21:01:21","date_gmt":"2026-07-22T21:01:21","guid":{"rendered":"https:\/\/recipesecrets.delicedcook.com\/?p=992"},"modified":"2026-07-22T21:01:21","modified_gmt":"2026-07-22T21:01:21","slug":"whats-this-black-stuff","status":"publish","type":"post","link":"https:\/\/recipesecrets.delicedcook.com\/?p=992","title":{"rendered":"What\u2019s this black stuff?"},"content":{"rendered":"<p class=\"PDq2pG_selectionAnchorContainer\" data-start=\"0\" data-end=\"153\">The black areas in those potatoes are most likely\u00a0<strong data-start=\"50\" data-end=\"93\">internal black spot (internal bruising)<\/strong>\u00a0or\u00a0<strong data-start=\"97\" data-end=\"134\">blackheart\/internal discoloration<\/strong>, rather than mold.<\/p>\n<p data-start=\"155\" data-end=\"185\">From the photo, I notice that:<\/p>\n<div class=\"code-block code-block-2\"><\/div>\n<ul data-start=\"187\" data-end=\"509\">\n<li data-section-id=\"1c3908p\" data-start=\"187\" data-end=\"258\">The dark patches are\u00a0<strong data-start=\"210\" data-end=\"237\">inside the potato flesh<\/strong>, not on the surface.<\/li>\n<li data-section-id=\"1kwsry1\" data-start=\"259\" data-end=\"316\">They appear\u00a0<strong data-start=\"273\" data-end=\"295\">firm and localized<\/strong>, not fuzzy or slimy.<\/li>\n<li data-section-id=\"wtzmug\" data-start=\"317\" data-end=\"509\">Several potatoes have similar dark streaks or oval-shaped black areas, suggesting a problem that occurred during growth, harvesting, storage, or transport rather than a single rotten potato.<\/li>\n<\/ul>\n<p data-start=\"511\" data-end=\"538\">The most common causes are:<\/p>\n<ol data-start=\"540\" data-end=\"1102\">\n<li data-section-id=\"15t4caq\" data-start=\"540\" data-end=\"717\"><strong data-start=\"543\" data-end=\"585\">Bruising during harvesting or handling<\/strong>\n<ul data-start=\"589\" data-end=\"717\">\n<li data-section-id=\"1tp76g4\" data-start=\"589\" data-end=\"660\">Impacts can damage cells inside the potato without breaking the skin.<\/li>\n<li data-section-id=\"odzewt\" data-start=\"664\" data-end=\"717\">The damaged tissue later turns dark brown or black.<\/li>\n<\/ul>\n<\/li>\n<li data-section-id=\"i4vu7v\" data-start=\"719\" data-end=\"933\"><strong data-start=\"722\" data-end=\"744\">Storage conditions<\/strong>\n<ul data-start=\"748\" data-end=\"933\">\n<li data-section-id=\"pbetf6\" data-start=\"748\" data-end=\"835\">Potatoes stored too cold or with poor ventilation can develop internal discoloration.<\/li>\n<li data-section-id=\"v66kh5\" data-start=\"839\" data-end=\"933\">Oxygen deficiency inside large piles of potatoes can also cause dark centers (\u201cblackheart\u201d).<\/li>\n<\/ul>\n<\/li>\n<li data-section-id=\"soiubw\" data-start=\"935\" data-end=\"1102\"><strong data-start=\"938\" data-end=\"973\">Natural physiological disorders<\/strong>\n<ul data-start=\"977\" data-end=\"1102\">\n<li data-section-id=\"142b3cu\" data-start=\"977\" data-end=\"1102\">Sometimes potatoes develop internal necrosis due to environmental stress while growing, such as heat or irregular watering.<\/li>\n<\/ul>\n<\/li>\n<\/ol>\n<p><!--nextpage--><\/p>\n<h3 data-section-id=\"tuj9xx\" data-start=\"1104\" data-end=\"1129\">Are they safe to eat?<\/h3>\n<ul data-start=\"1131\" data-end=\"1429\">\n<li data-section-id=\"f1hjmk\" data-start=\"1131\" data-end=\"1276\"><strong data-start=\"1133\" data-end=\"1213\">If the potato is otherwise firm, smells normal, and the black area is small:<\/strong>\u00a0You can usually\u00a0<strong data-start=\"1230\" data-end=\"1258\">cut out the dark portion<\/strong>\u00a0and use the rest.<\/li>\n<li data-section-id=\"a7thlu\" data-start=\"1277\" data-end=\"1429\"><strong data-start=\"1279\" data-end=\"1400\">If the potato is soft, has an unpleasant odor, is leaking liquid, or the black discoloration is extensive throughout:<\/strong>\u00a0It\u2019s best to\u00a0<strong data-start=\"1414\" data-end=\"1428\">discard it<\/strong>.<\/li>\n<\/ul>\n<h3 data-section-id=\"vli79l\" data-start=\"1431\" data-end=\"1456\">Looking at your photo<\/h3>\n<p data-start=\"1458\" data-end=\"1778\">Because\u00a0<strong data-start=\"1466\" data-end=\"1521\">many of the potatoes have fairly large dark centers<\/strong>, I would be cautious. If every potato in the batch has extensive black discoloration, it may indicate the batch was poorly stored or damaged. In that case, returning or discarding them is reasonable, especially if the dark areas extend deep into the flesh.<\/p>\n<p data-start=\"1780\" data-end=\"1981\" data-is-last-node=\"\" data-is-only-node=\"\">If you haven\u2019t cooked them yet, cut one completely in half. If the black area is confined to a small section, trim it away.
